My All-Time-Favourite-Super-Simple Breakfast

During my first few months as a mom, breakfast was 6894th on my list of things to worry about. To be honest I don’t really recall a breakfast hour at all. My days somehow drifted from 4am feedings, directly into an 11am snack of cold leftovers eaten over the kitchen sink while continually bouncing the 10 pounder strapped to my chest.

Anyone else?

LUCKILY I survived those months (ok, fine, years) of fogginess and now actually savour hot meals, enjoyed using clean silverware, whilst sitting - preferably while watching YouTube videos about decorating - don’t judge!

In particular -I enjoy breakfast.

Spoiler Alert: It’s oatmeal.

Warm, filling, versatile GLORIOUS oatmeal.

Why I love it:

  • It takes MINUTES to make

  • It doesn’t have a bunch of additives

  • I can change it up depending on the season

  • It keeps me full

  • It’s DELICIOUS

  • My kids love it


How I make it:

Step 1: Soak Oats

I pour a bunch of oats in a pot. I fill the pot with water just enough to cover the oats. I leave it sitting on the counter overnight.

Step 2: Cook

In the morning I turn the burner to medium, stirring often, until cooked - about 5 minutes.

Step 3: Add Toppings

Top with sliced banana, generous splash of milk and generous sprinkle of cinnamon. Or whatever my little heart desires.

Step 4: Enjoy!

*Note: I don’t measure my oats because I want leftovers. But one generous adult serving is probably about 3/4 of a cup of dry oats.


How You Can Make it Your Own:

The possibilities are ENDLESS!!! No joke.

But here are a few ideas to ponder:

  • I used regular ol’ rolled oats (whatever is on sale), BUT if you’re looking for an extra nutrition bomb change it up with steel cut or gluten-free or your favourite brand - any will work!

  • Instead of banana, try blueberries, strawberries, raspberries, sliced apple or mangoes

  • Add a spoonful of any type of nut butter

  • Walnuts, peanuts, almonds or pecans

  • Seeds - I think I’ve tried every kind. They are all amazing.

  • Spoonful of coconut oil or butter

  • Raisins or craisins - or any dried fruit

  • Instead of cinnamon try pumpkin pie spice

  • Honey or brown sugar or maple syrup

  • Coconut flakes

  • Cacao nibs

I hope this gives you some inspiration to kick-off your day with a bowl full of YUM. If it isn’t oatmeal no worries - choose whatever gets you PUMPED while keeping it simple - to keep you sane!
