Broccoli Salad: the ultimate potluck go-to

If you want one go-to potluck salad, make it this one. It’s simple to make and people go nuts over it!

Only drawback is that once you make it once, it’s all they’ll ask for.

You’ve been warned!

Ingredients:

  • broccoli crowns (2-3 bunches)

  • 1/2 C red onion

  • 1/3 C white wine vinegar

  • 1/4 C sugar

  • 2 C mayonnaise

  • sunflower seeds (around 1/2 C)

  • 1 pack of bacon

Directions:

  1. Cook bacon, cool and crumble.

  2. Chop broccoli into bite-sized pieces and finely chop onion and combine in large bowl.

  3. In a smaller bowl combine vinegar + sugar + mayo to make dressing.

  4. Pour dressing on broccoli and onion and stir so it’s evenly covered. Keep some dressing for later. Put into fridge until ready for serve (min. 2-8 hours).

  5. Before serving add bacon and sunflower seeds + additional dressing (if needed).

I normally make the dressing the night before and just toss it in the fridge.

I often have dressing leftover - which is perfect as a coleslaw dressing for later in the week :)

You can even prep the broccoli and onion the night before.

I have also added dried cranberries and served at Christmas time - so yummy.

I hold back some of the bacon and seeds to sprinkle on top - for the cute factor :)
